Mikkel Borg Bjergs is the man behind the Danish micro-brewery Mikkeller, one of the most innovative and cutting-edge breweries in the world. While working as a physics and mathematics teacher, he started to experiment with hops, malt and yeast at home in his kitchen in Copenhagen.
